The Novello Roccamonfina is obtained by a vinification performed with the method of carbonic maceration. In addition to the particular olfactory characteristics, this type of process gives the wine both a particularly vivid colour with shades of purple and a fresh aroma. The novello is availbale on the market from the 6th of november every year. An optimal and typical gastronomic combination of Novello is by pairing it with chestnuts harvested in Roccamonfina and consequently it pairs perfectly with chestnut-based flour. Nevertheless it can be perfectly paired to delicate dishes such as white meat and grilled Porcini mashrooms.
