Description
The tests carried out in the cellar through microvinifications of the various plots led us to identify the vineyards that manage to express the maximum and give the grapes particular characteristics.
From this comes Petratonda, a selection of the best grapes from the “La Contessa” vineyard.
The grapes, rigorously harvested by hand, late at the end of October, are processed at low temperatures in such a way as to preserve all the varietal aromas.
This wine, in fact, is rich in aromas of fruit and wild flowers and to complete its bouquet is added a hint of bread crust due to the long aging on the lees; this operation gives the wine a good structure and softness which well compensates for the marked acidity and flavour.
This Falanghina is bottled in May after approximately 7 months of aging on the wine lees.
