Description

Dolia is our Passito wine – Falanghina Roccamonfina I.G.P., a product obtained from a late harvest of the grapes, which are left to dry for several months, until a greater concentration of sugar is obtained and a decrease in the acid component.

Passito is a sweet wine that is produced in our vineyards located on the slopes of the extinct volcano of Roccamonfina. The geographical location of the vine in which the grapes are produced, and the particular processing method, characterized by the drying process on cane racks to which the bunches are subjected, give it the typical organoleptic characteristics.

It is an opulent wine with a sweet and aromatic flavour, amber colors and intense notes, it is a wine with a marked sweetness and aroma. Its perfume is characterized by fragrant and spicy notes, with an aroma of candied fruit and fruit.

The intensity and variety of the aroma of our Dolia make it perfect as an accompanying wine for sweets and desserts that recall and enrich its sweetness. It is excellent in combination with white pulp fruit tarts and with annurche apple pie, dry pastries. It can also be combined, in contrast, with very long-matured blue and spicy cheeses. Excellent to savor with fruit tarts, ricotta desserts, and for cheeses, perfect in combination with ricotta and buffalo mozzarella with chestnut honey.
