Description
Novello Roccamonfina is obtained with the carbonic maceration winemaking method.
In addition to the particular olfactory characteristics, this type of production gives the wine a particularly bright colour, with shades reminiscent of purple and a taste where the freshness of the aromas predominates.
The Novello is released on the market on November 1st of each year.
An optimal and typical gastronomic pairing of the new wine is with Roccamonfina chestnuts and consequently with foods based on chestnut flour, such as castagnaccio.
But it doesn’t disdain delicately flavored first courses such as white meats, game and grilled porcini mushrooms.
